What can I use as an egg replacement in cookies?
Im baking cookies for my deployed boyfriend and would like to make them as un-perishable as possible since they will travel for about a week in hot weather. The recipe calls for one egg, is there something I could use instead that might be less parishable? I'll be vaccum sealing them in a food saver bag but i'm still worried about the egg.
You can use ground flax and water for a sub for eggs, but it results in a chewier cookie.
For one egg, mix 1 tbsp of ground flax seed with 2-3 tbsp boiling water and let it sit for 10 to 15 minutes before using. It will have the consistency of egg whites.
